About the Recipe

I love this refreshing Tomato and Cucumber Salad, especially as a side on a hot summer day. Crisp cucumbers, sweet grape tomatoes, and ribbons of red onion in a zesty flavorful dressing that's so good, I like to make extra for dipping good crusty bread in! This salad is very versatile. It's good just as it is or with tasty toppings such as crumbled feta cheese, kalamata or black olives, or even grilled chicken.

For The Salad

  • 1 English cucumber, sliced into rounds and then halved

  • 1 - 10 oz package fresh grape tomatoes, cut in half

  • 1/2 cup thinly sliced red onion

  • 2 tablespoons chopped parsley


For The Dressing:

  • 1/4 cup extra virgin olive oil

  • 3 tablespoons red wine vinegar

  • 1 tablespoon granulated sugar or honey

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt - more or less to taste

  • 1/4 teaspoon black pepper - more or less to taste

Preparation

  1. Wash and chop the tomatoes, cucumbers, and red onion. Slice the tomatoes in half. Slice the cucumbers into rounds, then half. Slice the red onion into thin strips.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, honey (or sugar), dried basil, salt, and pepper.

  3. Add chopped salad ingredients to a large bowl and drizzle the salad dressing over the top. Toss everything together, cover with a lid or plastic wrap and place in the refrigerator for 2 hours . Top with parsley and stir together just before serving. Enjoy!
