Brownies
1 (15.25-oz) box strawberry cake mix
2 large eggs
1/2 cup melted butter
1 teaspoon strawberry extract
1/2 teaspoon vanilla extract
1/2 teaspoon salt
Glaze
3/4 cup powdered sugar
2 tablespoons strawberry preserves
1 tablespoon milk
Preparation
Preheat oven to 350 degrees F. Line an 8 inch square cake pan with parchment paper. Set aside.
In a medium bowl, whisk together eggs, melted butter, strawberry extract, and vanilla extract. Stir in strawberry cake mix and salt. Spread the batter into prepared pan.
Bake for 20-25 minutes, until a toothpick inserted into the center of the brownies comes out with only a few moist crumbs. Remove from oven and cool on a wire rack.
Glaze
Whisk together the powdered sugar, strawberry preserves, and milk in a small bowl. Pour the glaze over the cooled brownies.
Place the brownies in the fridge for about 30 minutes, then cut into slices. Garnish with fresh strawberries if desired. Enjoy!
