Ingredients

1 lb Rotini pasta, cooked according to package directions
1 1/2 cups mayonaise
1/2 cup sour cream
1/4 cup cup buttermilk, maybe more for thinning dressing
3 tablespoons dill pickle juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 large red bell pepper, diced
1 English seedless cucumber, diced
1/2 cup red onion, diced
1 cup frozen sweet peas, thawed
1 cup shredded cheddar cheese
Preparation
Boil pasta according to package directions. Drain and run under cold water. Set aside.
Make dressing by whisking mayo, sour cream, buttermilk, pickle juice, salt and pepper. Add more buttermilk to thin mixture to preferred consistency.
Mix pasta with red bell pepper, cucumber, red onion, sweet peas, and cheddar cheese, Add dressing and mix until well combined.
Refrigerate for at least 30 minutes. Stir before serving. Enjoy!
