Blueberry Butter Swim Biscuits are the perfect mix of cozy comfort and fruity sweetness. These fluffy golden biscuits are baked in a pool of butter, creating crisp, buttery edges with soft centers bursting with juicy blueberries. A simple no-fuss recipe that tastes like a warm hug straight from the oven.

Ingredients

1/2 cup (1 stick) unsalted butter
2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon lemon zest
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups whole buttermilk
1 cup fresh blueberries
1 tablespoon turbinado sugar
Preparation

After gathering your ingredients together, place butter in an 8 inch baking dish and place dish in oven. Preheat the oven to 425 degrees F, leaving the dish in the oven as it heats.

Whisk together flour, granulated sugar, baking powder, lemon zest, salt, and baking soda in a medium bowl.

Stir in buttermilk.

Remove baking dish from oven. Using oven mitts, carefully tilt dish to one side and use a tablespoon measuring spoon to scoop out 4 tablespoons of melted butter into the dough, leaving the remaining melted butter in baking dish.

Stir dough until combined. Gently fold in the blueberries.

Spread dough evenly into baking dish. Sprinkle dough evenly with turbinado sugar.

Bake at 425 degrees F until browned and cooked through, about 25 minutes Then remove dish from oven and let stand until butter absorbs into biscuits, about 5 minutes. Cut into equal pieces and enjoy!
