Chocolate Chip Pecan Banana Bread

Banana bread is one of my go-to comfort foods. I eat it as a snack, I'll have a warm slice in the morning spread with butter, or I'll enjoy it as dessert with a nice scoop of vanilla ice cream. As many different ways and times you can eat banana bread, it's just as versatile in ways you can make it. In this particular recipe, I like to add chocolate chips and pecans, but you can add whatever you like: walnuts, raisins, peanut butter chips, just to suggest a few. This banana bread recipe also has a secret ingredient-sour cream! The addition of sour cream makes a delectable moist banana bread that I think you'll want to make again and again.


Ingredients




  • 1/2 cup (1 stick butter) butter, softened

  • 1 cup sugar

  • 2 eggs, beaten

  • 1 1/2 cups flour

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 1 cup mashed ripe bananas, about 3

  • 1/2 cup sour cream

  • 1 tsp. vanilla

  • 1/2 cup semi-sweet chocolate chips

  • 1/2 cup chopped pecans







Instructions


  1. Preheat oven to 350 degrees. Grease and flour one 9-inch loaf pan.

  2. In a large bowl, using a hand mixer, cream the butter with sugar until light and fluffy. Add the eggs and mix well.

  3. Whisk together the flour, baking soda, and salt; combine with the butter mixture.

  4. Add the sour cream, bananas, and vanilla; stir well.

  5. Fold in the chocolate chips and pecans.

  6. Pour into prepared pan and bake for 50-55 minutes, or until toothpick inserted in the center of the bread comes out clean.

  7. Cool for 10 minutes in pan, then turn the loaf out on a rack.
